The Manoir des Érables is one of the first establishments in Québec to experiment and feature regional products with the express purpose of developing authentic Québecois cuisine. Each year, our Chef harmonizes his menu to the seasons so patrons can fully appreciate the range of local products. Even the wine selection is a tribute to gems produced locally. The manor is a repeat winner of the gastronomy award presented annually at the Grands prix du Tourisme Québécois, and also the 2002 gold award recipient. Following his formation at the ITHQ, the Chef Frédéric Cyr has done a training course with M. Daniel Vézina. Afterwards, he has had the chance to work with many great Chefs, whether in Ottawa, Montreal or New York. After spending some time on sea for the companies Îles du Ponant and Silver Sea, he finally settles down at the Manoir des Erables, his brother's inn and his father's table... Inspired by the seasons, his souvenirs, the people surrounding him or just simply his own imagination, he will make you discover a cuisine of regional flavours.
