Anise star snails

Ingredients for 10 people:

  • 100 snail
  • 2 1/2 cup cream
  • 2.5 oz Ricard
  • 3/4 cup white wine
  • 10 anise stars
  • Olive oil
  • Pepper, salt
  • Parsley
  • 10 flaky pastry squares

Methods:

  • In a pan with oil, brown the snails
  • Deglaze with white wine
  • Add the Ricard, anise stars, pepper and finely chopped parsley
  • Let boil for 5 minutes
  • Add the cream, and let shimmer another 5 minutes
  • Dress 10 snails and put the flaky pastry square on top to decorate.
  • Drizzle some parsley and serve.
