Blueberry Cheesecakes With Raspberry & Basil Caramel

Ingredients:

Blueberry Cheesecakes

  • 100 g spreadable sweet butter
  • 100 g blueberries
  • 100 g sugar
  • 100 g egg
  • 100 g flour
  • 100 g Philadelphia cream cheese
  • 20 g sugar
  • 1 egg

Caramel

  • 200 g sugar
  • 50 g raspberries
  • 4 leaves fresh basil
  • 80 g water

Preparation:

Blueberry Cheesecakes

  1. Blanch spreadable butter with sugar, incorporate eggs one at a time, then add flour.
  2. Whip egg together with 20 g sugar, add softened Philadelphia cream cheese.
  3. Combine this second mixture with the first and add blueberries.
  4. Bake in patties 3” in diameter by 1/2” thick at 350 degrees Celsius 8 to 10 minutes.

Caramel

  1. Mix 200 g sugar, once golden and deglazed,  with 80 g water and 50 g raspberries.
  2. Add 4 leaves fresh basil.

Presentation:

  • Cover cheesecakes with chantilly cream and fresh fruits.
