Chocolate and zucchini cake

Ingredients:

  • 125 g butter
  • 125 ml sunflower oil
  • 440 ml sugar
  • 3 eggs
  • 5 ml pure vanilla extract
  • 125 ml sweetened condensed milk
  • 665 ml unbleached flour
  • 5 ml salt
  • 60 ml cocoa powder
  • 2 ml baking powder 
  • 5 ml sodium bicarbonate
  • 2 ml cinnamon
  • 500 ml grated yellow zucchini
  • 250 ml walnuts and dried cranberries

Methods:

  • Beat together the first 5 ingredients until they reach a smooth, creamy consistency.
  • In another bowl, mix the dry ingredients and add them to the first mixture, alternating with the zucchini and condensed milk.
  • Pour the mixture into a cake mould and bake at 175°C (350°F) for 45 to 60 minutes.
