Ingredients:
2¼ pounds fresh spinach
2 tablespoons butter or margarine
salt and pepper
freshly grated nutmeg taste
1/2 cup all purpose flour
2 large eggs
1/4 teaspoon salt
1/4 cup vegetable oil, for frying
Method:
Cook fresh spinach in a large pan of boiling salted water for 3 minutes or until tender. Rinse with cold water. Squeeze excess water from the spinach and chop finely.
Melt butter in a medium pan over a medium heat. Add spinach and cook for 2 minutes, stirring. Season with a pinch of salt, pepper and nutmeg. Transfer to a large bowl.
In a medium bowl mix flour,egg,1/4 teaspoon salt, and a pinch of pepper and nutmeg to very thick batter. Add batter to spinach and mix very well. Taste for seasoning.
Heat oil in a skillet over medium heat. Fry spinach mixture by tablespoonfuls, flattening each after adding it, about 2 minutes or until golden brown on each side. Transfer to paper towels to drain. Serve hot.
