Lamb Carpaccio

Ingredients:

  • 1 loin of lamb (remove fat and nerves)
  • 45 ml grape seed oil
  • 3 tbsp white crème de menthe
  • 1 lemon, thinly sliced
  • Salt and pepper (5 pepper mix) to taste

Method:

  1. Trim lamb loin, soak in crème de menthe and surround with thin slices of lemon.
  2. Plastic wrap and let marinate in Remove lemon, drain and sear in oil until surface is caramelized. Add salt and pepper, allow to cool.
  3. Cut into small strips, garnish with fresh greens and a lemon-based dressing.
