Spicy fruits in ice cider

Ingredients:

  • 2 Russet apples peeled, cored and cut in eights
  • 2 Cortland apples peeled, cored and cut in eights
  • 2 pears peeled, cored and cut in half
  • 150 gr red plums halved, pitted
  • 150 gr yellow plums halved, pitted
  • 500 gr ice cider
  • 300 gr sugar
  • 1 lemon zest
  • 2 vanilla beans
  • 1 cinnamon stick
  • 3 peppercorn cracked
  • Cardamome

Method:

  1. Pour in a skillet cider, sugar, zest, vanilla beans split in half and spices.
  2. Bring to boil, reduce heat and simmer for 10 minutes.
  3. Add the fruits in skillet and bring it again to boil.
  4. Reduce heat and simmer for 10 minutes. Let it cool.
  5. Serve with a sablé.
