Spinach and mushroom and ricotta cheese Manicotti

Ingredients:

  • 6 slices of lasagna, cooked
  • 500 g ricotta cheese
  • 250 g chopped spinach
  • 375 g minced mushroom
  • 1 minced garlic clove
  • 1 minced shallot
  • Salt and pepper
  • Your favourite tomato sauce
  • Shredded mozzarella or cheddar

Methods:

  • Heat oil in a skillet over medium heat
  • Combine mushrooms, garlic and minced shallot. Cook and stir until it is almost done, then add the spinach, salt and pepper
  • Drain
  • Remove from heat and allow to cool
  • Mix in ricotta cheese
  • Cut each slice of lasagna in three parts
  • Put 60 g of the mixture on each third
  • Roll ( N.B. 3 rolls=1 serving)
  • Put 3 rolls in a baking dish and coat with tomato sauce
  • Sprinkle with cheese and grill in the oven at 400 F
  • Serve
