Squash and Smoked Duck Soup

Ingredients:

  • 1 tbsp olive oil
  • 1 tbsp garlic, finely chopped
  • 2 green onions, chopped
  • butternut squash, peeled and chopped
  • sweet potato
  • 1.5 L chicken broth
  • 100 g smoked duck

Directions:

  • Heat the oil in a pot. Add the garlic and green onions. Sweat without browning.
  • Add the squash and sweet potato. Cook for 2 to 3 minutes. Add the chicken broth.
  • Cook until the squash is soft, about 20 minutes. Blend the mixture with a blender.
  • Check the seasoning and add salt, pepper, or sugar if necessary.
  • Thinly slice the duck.
  • Serve the soup in bowls topped with slices of duck.
