Strawberry Consommé With Orange and Lemon Zest

Ingredients :

  • 500 g cut strawberries
  • 50 ml balsamic vinegar
  • 100 g sugar
  • juice and zest of a lemon
  • 100 ml orange juice

Preparation :

  •  Reduce balsamic vinegar by half .
  • Make a sauce with the 2 juices.
  • Reduce again and add sugar.
  • Let cool for a while.
  • Blanch and preserve the rest of the lemon zest.
  • When the juice has cooled, add it to the strawberries.
  • Serve in a soup plate and garnish with a lemon zest.
