Sturgeon «tournedos» from loup Marin shore, leek and spicy shellfish sauce

Ingredients :

  • 600 gr Fresh sturgeon
  • 4 Slice of bacon
  • Salt and pepper
  • 200 gr White's leek
  • 200 ml Lobster bisque
  • 80 ml 35% Cream
  • 1/2 Cinnamon stick
  • 1 Ginger stick
  • 1 pinch of cayenne

Preparation :

  • Cut the sturgeon in 4 portions
  • Roll the sturgeon like a «tournedos»
  • Put a slice of bacon around each
  • Make the bacon hold with a tooth pick
  • Put a pepper and salt as you wish
  • In a non-adhesive pan, in oil fry briskly the sturgeon on each side
  • In another pan put leek with butter and let it fry to a brown color
  • Heat the bisque as you add cinnamon, ginger and cayenne
  • Simmer to a liquid mixture by adding 35% cream
  • Assemble and decorated with herbs
  • Enjoy your meal
