The Maple butter and apple pancakes

Ingredients :

  • 2 eggs
  • 120 gr. of sugar
  • 90 gr. of  brown sugar
  • 210 gr. of soft butter
  • 1 drop of maple extract
  • 250 gr. of custard
  • 5 apples peeled and sliced in quarters. Put in water with a little lemon juice.

Preparation :

  • Cook at 120ºC the sugar and the brown sugar together.
  • Whisk the eggs and pour the mixture of sugar  slowly onto the eggs.
  • Add the butter and maple extract then whip.
  • Add the custard in the maple butter.
  • Let the apples simmer in 1 tablespoon of butter. Add a pinch of cinnamon
  • Spread the thin pancakes on a flat surface.
  • Add 3 tablespoons of maple butter and 2 or 3 pieces of apples.
  • Roll the pancakes until closed.
  • Reheat in the oven at 300ºC for 7 min.
