Ingrédients :
1 cup (250g) of cream cheese
2 cups (500lm) of 35% cream
1½ tea spoon (7.5ml) of maple extract
1 cup (250ml) of maple syrup
Méthodes :
Let gelatine set in cold water (it will swell)
Beat cream cheese until soft (soften in microwave if necessary) put aside
Beat 35% cream and add maple extract put aside
Bring the maple syrup to a boil (100°C or 240°F)
Pour maple syrup in mixer on top of beaten egg yolks
Mix well ( scrape sides often, until whipped)
Drain the gelatine and melt it in a double saucepan or use the microwave
Add melted gelatine to the mixer
Once mixture is cold add cream cheese
Finally, delicately fold in the whipped cream
Pour into Martini glasses or dessert bowl, chill and decorate with fresh fruits before serving.
