Tremendous Maple Cheese cups

Ingrédients :

  • 8 sheet of gelatine
  • 1 cup (250g) of cream cheese

  • 2 cups (500lm) of 35% cream

  • 1½ tea spoon (7.5ml) of maple extract

  • 1 cup (250ml) of maple syrup

  • 6 egg yolks

Méthodes :

  •  Let gelatine set in cold water (it will swell)

  • Beat cream cheese until soft (soften in microwave if necessary)  put aside

  • Beat 35% cream and add maple extract   put aside

  • Bring the maple syrup to a boil (100°C or 240°F)

  • Pour maple syrup in mixer on top of beaten egg yolks

  • Mix well ( scrape sides often, until whipped)

  • Drain the gelatine and melt it in a double saucepan or use the microwave

  • Add melted gelatine to the mixer

  • Once mixture is cold add cream cheese

  • Finally, delicately fold in the whipped cream

  • Pour into Martini glasses or dessert bowl, chill and decorate with fresh fruits before serving.
