Unctuous duck with ginger and African coffee

Ingredients :

  • 4 breasts of duck
  • 50ml. of expresso or strong coffee
  • 150ml. of light coffee
  • 1 tbs of ground pepper
  • 2 tbs of honey
  • 1 tbs of chopped fresh ginger
  • 100ml. of reduced duck gravy
  • Zest of orange peel
  • 1oz. of armagnac
  • A pinch of cinnamon
  • A pinch of nutmeg
  • A pinch of aniseed
  • 50 gr. of butter, salt and pepper

Preparation :

  • Blanch the orange zests.
  • Caramelize honey, add armagnac, ginger, coffee, spices, duck gravy, orange zests and butter.
  • Let simmer for 20 to 25 minutes, adjust seasonning, reserve and keep warm.
  • Season the breast of duck on both sides.
  • Fry quickly on skin side until coloring.
  • Then, fry the other side one or two minutes.
  • Finish in preheated oven at 375C for six to eight minutes.
  • Cut in fine slices and place in a clover shape in a service plate.
  • Pour the sauce over.
