Apple Sauce Spice cake

Ingredients:

  • 1 cup butter
  • 2 cups sugar
  • 2 eggs
  • 2 cups apple sauce
  • 4 cups flour
  • 2 tsp. baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup chopped walnuts or pecan (optional)
  • 1 cup of dried cranberries or raisins (optional)

 

Method:

  • Beat butter and sugar until fluffy (about 5 minutes)
  • Add the eggs and applesauce and mix well.
  • Combine dry ingredients and stir into the wet mixture.
  • Add optional ingredients if desired.
  • Pour into a greased and floured 10 inch tube pan or bundt pan.
  • Bake at 325 degrees for one hour or until the cake seperates from the sides of the pan.
  • Cool in pan for 30 minutes, turn onto cake rack.
  • Sprinkle cake with plain icing sugar or frost with Maple Syrup Icing (recipe follows).

 

Maple Syrup Icing

  •  4 cups of icing sugar
  • 1 cup butter, softened
  • 1/8 cup of maple syrup
  • 1 tsp of vanilla

 

Method:

  • In bowl of stand up mixer, beat icing sugar and butter.
  • Add the maple syrup and vanilla and continue beating until well blended.
  • Frost the cake.
