Carrot soup

Ingredients:

  • 1 onion, chopped
  • 1 garlic clove
  • 5 cups water
  • 2 1/2 cup carrots, peeled and chopped
  • 1/4 cup rice
  • 2 tbs chicken stock

Method:

  • In a pan, sauté the onions and garlic in oil until golden
  • Add the water, carrots, rice and chicken stock
  • Bring to a boil over high heat
  • Reduce the heat to low, cover and simmer until the carrots are tender, about 25 minutes
  • Process with a stick blender until smooth
  • Let cool and serve
