Chef(s) Amélie Roch offer(s) you the following appetizer:

Celeriac salad, arugula and green apples, "carcajou roots" mustard dressing and daisy buds, a few grilled pumpkin seeds

Ingredients:

  • Few arugula leaves
  • 250gr of celeriac
  • 150gr of green apple (julienne)
  • Grilled pumpkin seeds to taste

Dressing:

  • 100ml Carcajou root mustard
  • 100 ml plain yogurt
  • Citrus juice (1/2 of grapefruit, 1 orange, 1 lime, 1 lemon
  • 75gr of daisy buds
  • Salt, pepper to taste 

Method

  • Mix all dressing ingredients
  • Place a few arugula leaves in a serving bowl
  • Mix juliennes of apple and celeriac with some dressing
  • Place over arugula in bowl and sprinkle with pumpkin seeds
  • Serve
