Roast tomato tart with garlic and warm goat cheese

Ingredients for 1 person:

  • 1 small pre-cooked piecrust
  • 2 tbsp goat cheese (Chèvre des Neiges)
  • 2 slices of tomato
  • Olive oil
  • 2 tbsp garlic, finely chopped
  • 1/2 tsp French shallot, finely chopped
  • Ground pepper
  • Fleur de sel
  • Fresh basil, finely chopped
  • Spring greens

Methods:

  • Spread the goat cheese on the bottom of the piecrust
  • Add the tomatoes, after having first brushed them with olive oil
  • Sprinkle in the chopped garlic and shallots
  • Season with fresh ground pepper, fleur de sel, and basil
  • Warm in the oven for about 5 minutes at 350°F to soften the cheese and tomatoes.
  • Serve warm on a bed of spring greens.
