CAA-AAA Four Diamond Awards are given to hotels and restaurants found to be of exceptional quality in terms of satisfying the needs and expectations of customers. Hôtel du Lac Carling, located in the Laurentian town of Grenville-sur-la-Rouge, is among the 31 Québec establishments awarded for the quality of their accommodations, welcome and service. The three-floor establishment is a five-star hotel. It houses 99 exquisitely decorated rooms and suites, with a view of the golf course and the majestic Laurentian area. Auberge Lakeview Inn, located in Lac-Brôme-Knowlton, in the Eastern Townships, is home to a Victorian dining room featuring century-old woodwork, original tin ceiling, and vintage oil lamps. Regional specialties include the famous Brome Lake Duck and Québec Lamb. And romantic evenings come naturally thanks to the inn's traditional European-style service.
At Auberge des 21, in Ville de Saguenay (La Baie sector), in the Saguenay-Lac-Saint-Jean region, the menu varies according to the local produce in season, especially little known wild, edible plants such as bulrushes, highbush cranberries, cloudberries, wild violets and mayflowers. The result is modern cuisine inspired by local traditions and Amerindian recipes. Chef and owner Marcel Bouchard runs the inn's kitchen with great dexterity and finesse in order to always make every dining experience excitingly new.
Manoir des Érables, located in Montmagny, in the Chaudière-Appalaches region, was one of the first establishments in Québec to use and promote regional products for the express purpose of advancing authentic Québec cuisine. Every year, the manor's executive chef Martin Boucher concocts menus in harmony with the seasons, the local products and the wine selection.
