Le Grand Lodge Mont-Tremblant Honors its Gold Laureate with a Promotion as Executive Chef

 

Mont-Tremblant, February 20th, 2009 - Le Grand Lodge Mont-Tremblant, member of Québec Resorts and Country Inns, is proud to announce the promotion of David Ouellet, as the new Executive Chef of all food and beverage services of the hotel.

 

After 5 years as Sous-chef at Le Grand Lodge, David receives this promotion following a year of acclaim for both himself and Chez Borivage; two Gold Awards at the national level and one Table d'argent at the regional level, awarded by the Grands Prix du tourisme québécois 2008, a perfect score given by Québec Resorts and Country Inns for one of David's original creations, and winner of the Excellence award for Restaurant /Bar 2008 as chosen by the Mont-Tremblant Chamber of Commerce.

 

His great passion and innate sense of how to create works of art both for the eye and the palate, have garnered him much respect every step of his career; from his beginnings of professional learning at the Envolée de Montmagny, to rigorous training in one of France's top hotels, to the chic and trendy Montego restaurant in Québec City and the Fairmont at Mont-Tremblant before joining the Grand Lodge.

 

Yet, it is his years at the Grand Lodge where his talent has flourished and where he took full reigns of many important initiatives:

·         conducting some of the monthly training sessions for the entire food and beverage staff including innovative security procedures that are used daily in the kitchen

·         renovations of the various work spaces within the kitchen to allow better access and flow for the staff with the result of a greater efficiency of the entire team

·         reference book: he created a recipe book detailed with pictures, diagrams and how to methods, to ensure that each dish is prepared in the highest gastronomic standards Chez Borivage has been acclaimed for

·         he has sourced out and forged significant relationships with all the best producers and suppliers of fine products, giving le Grand Lodge the privilege of offering many exclusivities.

 

David is certified by the Red Seal program, a Canadian and Quebec government trade certification, and he was a finalist for the Québec Pork competition. 

 

«For the last several years, we have enjoyed one of the lowest personnel turnaround in our food and beverage department,» explains Michel Garnier, General Manager of Le Grand Lodge, « we have over 80% of staff retention. And it is clear to me, that David's contribution has made an impact. It is a natural progression for him to take on the highest level position as our Executive Chef. He deserves it - without a doubt! »
